Estudiar en la Escuela de Cocina y Pastelería Terra d’Escudella, permite tomar conciencia de uno mismo y de sus compañeros. Permite una interacción con diversas personas de diferentes características y estimula las habilidades para trabajar en grupo.
Casi exclusivamente, tratamos de enseñar, pero entre las paredes que confinan a la Escuela de Cocina y Pastelería Terra d’Escudella, encontramos multitud de anécdotas gastronómicas, historia e historias de alumnos, ex alumnos que ahora son amigos.
Procesos, técnicas culinarias, recetas, productos, secretos de cocina, dietética, números, porcentajes, servicio de mesa, cuchillos, tartas, gestión de restaurante, cócteles, vinos...

Incluso si me permitís, también encontramos antropología social, que es una rama de la sociología.
Para cocinar hoy en dia, el principio de la libertad es fundamental. Se trata de ejercer una cocina por y para todos. Libre de ataduras y de consideraciones obsoletas. Para ello, es fundamental contar con la persona como cocinero, creando relaciones con otras culturas, formas de pensar, de vivir o de comer.

La mejor formación está en la calidad. Por este motivo entre las Escuelas de Cocina y Pastelería de Barcelona. La Escuela Terra d’Escudella prioriza su principal cualidad, la formación.

El nuevo escenario que conforma la sociedad actual plantea una serie de retos. Por ejemplo, destaca la necesidad de formar trabajadores competentes. Capaces obtener información, darle un significado nuevo y transformarlos en conocimientos prácticos.
Igualmente, se une la necesidad de desarrollar nuevas formas de enseñar y de aprender. Centradas siempre en el estudiante y su aprendizaje.

Terra d’Escudella es una Escuela de cocina y pastelería ubicada en Barcelona de carácter privado. Se dedica a la formación y/o reciclaje de profesionales o futuros profesionales de la Hostelería, impartiendo cursos de cocina y pastelería.
Crear una Escuela, con la pretensión de lograr algo más que enseñar recetas, es tal y como creemos, una tarea muy ambiciosa. Con nuestros cursos de cocina y de pasteleria, sobretodo aprenderás a trabajar en una cocina.

The four acre walled garden behind the hotel is planted with fruit, vegetables and herbs, providing a ready source of fresh seasonal ingredients for the cookery school kitchen, and estate venison, rabbit, smoked trout and game are a few examples of the local ingredients sourced from the wider estate.

The Cookery School runs a busy programme of half day and full day hands-on, practical cookery classes throughout the year. Angela Gray's Cookery School

Angela Gray has worked prolifically in the food world starting her career as a personal chef working in Europe and North America. Her clients have included an esteemed list of Counts and Countesses and Lord Andrew Lloyd Webber. Angela moved on into the restaurant business where she developed her relaxed style of cuisine with a strong Mediterranean influence.

She returned home to Wales where her culinary path changed direction and led her back to school. After three years of full time study she graduated with a BSc (Hons) degree in Food Science. Whilst studying Angela also ran a small fine dining catering business and held a twice-monthly cooking club in her home. The club lasted for 15 years and was to form the basis of the cookery series that was to come her way.

Angela tirelessly promotes cooking as a relaxation therapy, in parts, meditation even, also as nourishment, and the perfect balance to the day-to-day stresses life can bring. With her passion running high for teaching people to cook, she is looking forward to the future and welcoming people into the culinary oasis at Llanerch Vineyard.

We believe that cooking should be free of stress or anxiety, and we structure our courses to emphasise hands-on practice of good, basic culinary techniques rather than slavishly following a particular recipe.  In this way we hope to impart to our students the confidence to cook intuitively, to trust their senses, and to have fun while doing so!

Most importantly, we strive to teach everyone about ingredients and flavours, so that you can feel confident adapting the dishes we make during class to whatever you have on hand.  Making a meal at home needn’t be tied to a lengthy shopping list or an intimidating set of instructions.  It need only be approached with a sense of curiosity and enthusiasm, and the knowledge that food tastes best when it was a joy to make.

Based in the heart of Sherwood Forest on the Welbeck Estate in North Nottinghamshire, the school is housed in the former fire stables, dating back to 1870. Newly refurbished training rooms are specially equipped for the teaching of breadmaking, cheesemaking, brewing, butchery, charcuterie and preserving. More recently business and entrepreneurship courses have been added to the short course schedule and new course subjects are in development.The environment is serene and inspiring, but very accessible.

The School has an outstanding reputation for the quality of training it provides with courses being taught by some of the most skilled and experienced artisan producers and practitioners in the UK, Europe and beyond.

We are especially keen to provide opportunities for the local community as well as to teach enthusiasts, existing and aspiring producers and complete newcomers.

The School is a registered charity and, as a not-for-profit institution, is committed to providing the widest possible access to its facilities. The school fundraises to support its general activities and for bursaries to assist Advanced Diploma students with course fees. Several hundred thousand pounds has been raised and awarded to students since the school opened in 2009.

The school was the first purpose built cookery school in Kent. Established in early 2011 and makes use of the old listed barn.

When the school was designed we wanted students to feel welcome and feel at home, we want all our visitors to relax and enjoy themselves during their time with us. You will not find the cold clinical stainless steel of a professional kitchen, instead, you will find rustic oak beams, antique furnishings and fine china.

The kitchen is fully equipped with everything you need to create a vast array of dishes from fine French pastries to fresh pasta, with dedicated work stations for up to 10 people.

The school offers a relaxed, informal setting letting the natural beauty speak for itself.

Hi, I'm Flora!

lovely to meet you

I was brought up in Cornwall during the 1970s and I loved messing about with food from a young age. Unable to buy some of the normal staples of today's larder, I would watch and help my mother make all manner of things, including her own tagliatelle which was then draped over the kitchen chairs to dry. However, it was a childhood trip to Venice and a particularly excellent lunch at the world-famous Cipriani which convinced me that food was truly my passion.

Later I went on to work for Rick Stein in his Seafood Restaurant in Padstow, but it wasn't until I moved to New York that I received any formal cookery education, studying at the Institute of Culinary Education. A move to Melbourne gave me invaluable experience working under the highly regarded food critic, Geoff Slattery, at his restaurant.

Having had four children, I've had my hands full both in the kitchen and out. I decided that as cooking had always been such a big part of my life, I wanted to share the skills I had acquired over the years and the fun I'd had in the kitchen, so in 2015 I opened my own cookery school based in Hampshire. My aim is to teach teenagers, young adults, and indeed anyone who wants to learn how to cook for themselves and others.

I have my DBS Enhanced Certificate, my Level 2 Award in Food Safety for Catering and full insurance. I am also delighted that Flora’s Kitchen is an Approved Activity Provider for the Residential section for the Gold D of E award.

Dudwell Cooking School

Dudwell School is set in the heart of the Mendip Hills in Somerset. It is run by Caroline Waldegrave, the founding Principal, and former Managing Director and co- owner of Leiths School of Food and Wine, on whose board she remains. Caroline is the author of many cookery books including the Leiths Cookery Bible which was written with Prue Leith. Many of the recipes cooked will be taken from the Leiths Bible.

Dudwell Field Farm is the Waldegrave family home and you are warmly invited to join Caroline in her purpose built brand new professional kitchen for a week learning how to cook for pleasure. You will acquire this essential life skill, and have fun at the same time. The course runs for five days and is designed both for guests with little cookery experience and for those who want to refresh or develop their cooking skills. You will learn the basic techniques and how to use them to produce a range of interesting and delicious recipes.

The plan is that we cook in the morning, eat the lunch we have made, enjoy the afternoon relaxing and then cook supper from 4.30 or thereabouts. The afternoon can be more constructive if preferred and we can arrange bridge, tennis, painting, snooker and creative writing classes for a small extra cost. We will eat our meals together in the summer house.

We also offer short bespoke courses as requested. These can be for a group wanting to learn a specific skill such as game cookery, working with chocolate, fish, sauces or knife skills. They can be for anything from a morning through to 5 days and can take place during the week or at weekends. Simply e-mail Caroline to discuss your ideas.

Vale House Kitchen is a bespoke country skills and cookery school situated in the village of Timsbury, 8 miles southwest of Bath. We offer a wide range of cookery and baking courses as well as a unique opportunity to acquire or hone your fishing, shooting, foraging, brewing and butchery skills.

Our courses cater to all levels from beginner to expert and are taught by the very best of the South West’s culinary professionals, including Tim Maddams, Kieran Lenihan and Vivien Lloyd. We limit numbers to 8-10 participants per class to ensure an intimate, hands-on and inspiring experience.

We run a programme of seasonal, inspirational and informative classes throughout the year and specialise in private, bespoke classes for groups of friends, family and work colleagues.

The Foodworks Cookery School

Foodworks Cookery School is an imaginatively created cookery school located in the Cotswolds, Gloucestershire. The attractive building enjoys light and views from its large windows. It is comfortably laid out with a chill out space on the mezzanine floor and a pretty garden with barbecued area through French doors from the main kitchen. We are 10 miles from  Cirencester, Cheltenham and Gloucester, the school enjoys strong ties to the community and the famous faces which support it.

 

Our beautiful barn transforms into a cool private restaurant seating up to 40; perfect for parties, small weddings and special events such as Prue Leith’s book signing. We can arrange things down to the smallest detail and have a wealth of incredible Cotswold suppliers at our fingertips. Recent events have included a sushi night for Mike Tindall and the England Rugby Team, filming for ITV’s 10 Mile Menu and Jamie Oliver’s Vintage Tea Party Bake Off.

The Squires Kitchen School has been teaching the art of cake decorating and sugarcraft since 1987.

The school was created to share our extensive knowledge of the craft with the help of amazing teachers and passionate students.

In spring 2010, Squires Kitchen’s sugarcraft school relocated to larger premises at The Grange, a beautiful Georgian style building close by. Next door is the new bakery school, a fully equipped room complete with state of the art appliances from Smeg to be opened in September 2010, so you can come to Squires to learn everything from baking a cake to decorating it.
