Short bread recipe by Zoe Paris
Zoe Paris, Pastry Chef at Wharekauhau Country Estate, a luxury lodge near Wellington in New Zealand, shares the lodge’s famous short bread recipe. The short bread, so the story goes, has been described by Will and Kate, Duke and Duchess of Cambridge, as the best in the world. And the recipe is so simple!
Wharekauhau Short Bread Recipe
– 250gm cold unsalted butter
– 125gm caster sugar
– 100gm corn flour
– 1 tsp vanilla essence
– 250gm plain flour
Cream butter and sugar, add vanilla, sift in flour and cornflour.
Bring together by hand to a smooth dough.
Wrap in cling film and let rest in refrigerator for a minimum of one hour or overnight.
Roll out to 1cm thick and cut to desired shape.
Bake and serve.
