Sea Bream Ceviche with Citrus Note

 

160g of Sea Bream Fillet cut into 5 equal pieces

 

Sauce ingredients:

  • 7g –   Olive Oil
  • 15g – Lemon Juice
  • 10g – Jalapeño
  • 15 – Red Jalapeño
  • 10g – Grapefruit
  • 10g – Orange juice
  • 2g –   Mint leaves
  • 2g – Seasoning (salt and pepper)
  • 5g – Tabasco sauce

 

Instruction:

Before put ingredients into blender fine chop Jalapeños  ( red and green). Put in blender all mentioned ingredients and blend together. Afterwards place fillet of fish into plate and strain the sauce pouring it on the pieces of fillet. The unstrained part( which is thick and can’t be strained ) place in the middle of the plate on the fish.

 

Garnish and Arrangements:

  • 2g – Lemon zest
  • 2g – Lime zest
  • 10g – Cucumber sliced
  • 12g – Red radish sliced
  • 2g – Watercress
  • 2g – Capers
  • 14g- Lemon wedge
  • 15g – Grapefruit wedge
  • 2g – Micro-herbs
  • 2g – Arugula
