Paiche

Method:

  1. Cut the fish into small 1cm x1cm dice
  2. Reserve in cool temperature.

 

Stir-Fry

Ingredients:

  • 250g Onion 
  • 250g Bell pepper 
  • 6g Salt 

 

Method:

  1. Chop both products in brunoise.
  2. Stir-fry the onion and paprika together with salt in a saucepan for about 6 minutes.

 

Coriander stems

Ingredients:

  • 100g coriander stems

 

Method:

  1. Chop the stems in brunoise and set aside.

 

Assembly

Ingredients:

  • 1 pc Tacuara (bamboo) 
  • 40g Paiche 
  • 10g Stir fry
  • 10g pulp of copoazu

 

Method:

  1. Mix all the ingredients in a bowl.
  2. Fill the bamboo and cook it on the coals.
