World-renowned Korean-American chef Akira Back shares a recipe inspired by the classic tuna pizza, which is served at his eponymous restaurants.


Homemade Smoked Salmon Pizza / Toast


  • 1 pc tortilla or white bread
  • 1 tbsp ponzu mayo
  • 4 slices smoked salmon
  • 10g red onion (thin slice)
  • any fresh herbs (basil, oregano, shiso, etc)
  • 5 drops truffle oil
  • sea salt


Make your own ponzu sauce

  • 100ml rice vinegar
  • 50ml soy sauce
  • 10ml lemon juice
  • 600g mayonnaise
  • 25g sugar


Dish assembly 

  1. Toast the tortilla or white bread until nice brown colour
  2. Brush it with ponzu mayo
  3. Sprinkle red onion all over the bread/tortilla
  4. Placed smoked salmon on top
  5. Finish with white truffle oil, sea salt, and your favourite fresh herb
