Under-Baked Chocolate Chip Cookie by Leonard Cheung
Leonard Cheung’s 8-year old Under-Baked Chocolate Chip Cookie Recipe
- 200 grams unsalted butter
- 160 grams brown sugar
- 2 eggs
- 2 teaspoons vanilla bean paste (or vanilla extract)
- 8 grams baking soda
- 8 grams kosher salt
- 350 grams all-purpose flour
- 300 grams chocolate chips
In a kitchen-aid mixer, cream the brown sugar and butter together with a paddle attachment. Add the eggs and vanilla bean paste once creamed. Mix on medium speed for 30 seconds.
Add the flour, baking soda, and salt afterwards. Add all the dry ingredients in 2 batches with low speed to avoid spilling the flour everywhere.
Finally, add in your chocolate chips.
Form the cookie dough into whatever shape you prefer. Bake at 190C for 7-8 minutes (depending on the size of your cookie dough).
