The Arabic bread, also called “pita bread”, is a very old food, since the time of the Egyptians and the Syrians, they were baked in hot stones. At the present time, in the Middle East, Arabic bread is a fundamental part of gastronomy, it is eaten during breakfast, lunch and dinner.

 

And in the world, it is so popular that you can even buy it at any supermarket, there are many brands, although its appearance is different from one made by hand.

 

The Arabic bread is round, flattened, and when it is cooked it inflates. The thickness is usually one centimeter, so the crumb is just enough, so when we open it in half it can resist the filling. Normally, it is used in the form of sandwiches, for the famous shawarma or falafel. We can fill it with cheese or, why not use it as if it were the base of a mini pizza? Let your imagination fly and enjoy it as you want.

 

Ingredients

  • 30 grams of dry yeast
  • 600 ml of warm water
  • 20 gr of sugar
  • 1 kg of whole wheat flour
  • 20 gr of salt
  • 40 ml olive oil

 

Instructions

 

For the ferment:

In a bowl we add warm water, yeast and sugar, and sit for 10 minutes to ferment.

In another bowl we add the flour and salt and stir them; then, with a wooden spoon, we form a hole in the center, as if it were a volcano. And little by little we incorporate the ferment.

Patiently, we mix everything and add a little warm water so that the dough is released. Do not despair if the dough has a lumpy appearance.

The oil will be the secret so that the dough does not stick in the hand. In a bowl pour the olive oil and put the preparation.

Allow to sit for 2 hours or until the volume rise. And cover with a plastic film to keep the texture and so it won’t dry.

 

For the kneading:

Sprinkle flour on a surface suitable for kneading.

We put the fermented dough on the flour and begin to form the dough with the palm of the hands, pushing the dough forward and repeat the process again, with the position of the hands at 45 degrees, for 10 minutes.

The optimum point of the mass is when it is smooth and homogeneous.

Before continuing, preheat the oven to 250 ° C between 5 to 10 minutes.

We go to the step of making the balls, calculate that each one weigh 45 grams. Then with a rolling pin, we flatten the bread that will take a disc shape.

On a baking tray, put the bread and let them bake for about 7 to 8 minutes, and we’re done.
