You a Lebanese chef with international experience such as you current work as Executive Chef in Montenegro. Tell us about how you got started as a chef. Why did you decide on cooking professionally?
I have 13 years of experience in the field of Middle Eastern cuisine as an executive Lebanese chef.
I started my career as a hobby and i excelled by hard work, long hours and self study by reading and creating new dishes daily and recipes.
Which culinary school did you attend?
In 2002 I studied and obtained specialization in the oriental kitchen from the Moyen institute in Beirut.
I started my career in western style cuisine at Watermelon restaurant in Beirut. It was an Italian, French fusion concept and Gaucho Steak House which was Argentinian cuisine.
As Executive Chef in Montenegro today, what is the culinary direction/ set up there?
At Four season Hotel & Resort Beirut, Pre-opening at the end of 2009, I gained valuable experience in the middle eastern and international cuisine. I started as chef de partie and was promoted to sous chef in the Banquet and main kitchen.
In 2012 I traveled to Dubai and i started working for the Reem Al Bawadi group as head chef of Lebanese and middle eastern concepts , they have 8 branches in UAE plus a central kitchen and it was the best Lebanese concept in Dubai .
As head chef at Reem al bawadi group i work for 2 Branches and a central kitchen in charge of 150 employees.
I create new dishes and recipes ,cost control, knowledge of kitchen technology, food technique, meat butchering , Lebanese Barbecue on charcoal grill , Lebanese Desserts, cold and hot Lebanese Mezza, kitchen organisation, training and scheduling staff, following HACCP ,FIFO and ISO.
In 2015 I travel to Southern Europe to Montenegro as Executive Lebanese chef at Byblos Restaurant In Porto Montenegro, Tivat city.
I created the Menu for the restaurant, a 5-star fine dining Lebanese concept. I was the first Lebanese chef in the country and it was the first Lebanese restaurant. I do many TV Interviews and talk about the Lebanese and middle eastern food as well as programs at pink TV live cook videos, also about Lebanese food cuisine and how its rich in ingredients and is healthy food.
*In 2017 I created a menu for a new Middle Eastern concept and gulf cuisine at Mazaya restaurant a 5-star fine dining establishment, working as executive chef and consultant In Montenegro Podgorica city, capital Plaza Center.
I traveled to switzerland also in 2017 as consultant ( in the Lebanese restaurant Kayan ) in Lausanne.
